From Food Truck to Full Restaurant: Corn Taco Celebrates Grand Opening in Schuyler

After years of determination, long days of construction, and an unwavering commitment to their dream, Corn Taco Restaurant & Bar has officially opened its doors in Schuyler. Owners Sabino and Maria Hernandez celebrated their grand opening weekend surrounded by family, friends, community leaders, and many excited customers ready to experience their new restaurant.


For Sabino and Maria, this milestone represents more than just opening a new business. It represents years of dedication, sacrifice, and belief in what they were building.


Their journey began with something simple: Maria’s love for cooking. She started making tamales at home and selling them locally to friends and neighbors. As more people tried her food, word quickly spread throughout the community. With the money they saved, Sabino and Maria were able to purchase a food truck and launch Corn Taco Mexican Food in 2014.


Over time, their food truck became a familiar sight and a favorite for many in the area. Known for their authentic Mexican dishes, fresh ingredients, and friendly service, Corn Taco continued to build a loyal customer base.


As their popularity grew, so did their vision.


Sabino and Maria began planning for a permanent restaurant where they could welcome customers year round and expand their menu and dining experience. The road to get there was not easy. From permits and zoning adjustments to financing and construction, it took years of work to bring the project to life.


Throughout the entire process, Sabino played a major role in building the restaurant himself, personally handling much of the construction work and slowly transforming the space into the welcoming restaurant it is today.


That dedication made the grand opening weekend even more special.


The celebration kicked off with mariachi music on Friday, setting a festive tone as guests stepped inside the new restaurant for the first time. The energy continued throughout the weekend with live music on Saturday and Sunday, drawing community members together to celebrate the exciting new addition to Schuyler’s dining scene.


Guests also had the chance to explore Corn Taco’s extensive menu, filled with authentic Mexican dishes that reflect Maria’s passion for cooking and the flavors that first made their food truck so popular.


The Schuyler Area Chamber of Commerce was proud to join the celebration and present Sabino and Maria with a commemorative brick, recognizing their hard work, perseverance, and investment in our community.


Stories like Sabino and Maria’s are what make Schuyler special. Their journey from selling homemade tamales, to operating a food truck, to opening a full restaurant is a powerful reminder of what dedication and belief in a dream can accomplish.


Today, Corn Taco Restaurant & Bar stands as a place where great food, family, and community come together.
